I recently revisited Hostellerie Briqueterie & Spa Champagne after several years and was warmly welcomed back, evoking cherished memories of my late wife's company during our previous stays. The elegant decor and meticulous upkeep of the hotel and gardens remain impeccable, setting the stage for an exceptional culinary experience.Venturing into the hotel's esteemed restaurant, I indulged in a sea bass dish delicately paired with fennel puree and champagne sauce, a testament to the chef's innovative artistry. Each bite was a symphony of flavors that transported me to the heart of the Champagne vineyards, where local ingredients shine.While the abundant buffet breakfast at €27 per person may seem excessive, the quality and variety justify the cost. The restaurant, offering lunch and dinner, captivates with its serene ambiance, perfect for savoring gastronomic delights.Despite minor service hiccups, the attentive staff and accommodating front desk enhanced my overall experience. For those seeking a culinary journey in a tranquil setting surrounded by vineyards, Hostellerie Briqueterie & Spa Champagne is a destination worth savoring.
